A budding chef from Cleeve has won praise from his employers after passing a tough apprenticeship course in one of the region’s busiest restaurants.
Hadley Stevenson O’Shea, aged 17, took on the role at the Bardolino Pizzeria, Bellini and Espresso Bar at DoubleTree by Hilton, Cadbury House, which is world-renowned chef Marco Pierre White’s latest culinary venture.
Hadley enrolled on a professional cookery course at Weston College and passed the course with flying colours this summer.
He learned his skills directly from Marco himself and then helped to launch Bardolino at the Congresbury hotel earlier this year.
Hadley said leaving school after studying his GCSEs was the best thing he could have done.

He added: “All my friends stayed on to do A-levels but this, for me, was by far the best option.
“Not only have I gained the relevant qualification, but I’ve also worked at the sharp end serving customers.”

Jason Eaton, general manager at theclub, praised Hadley’s achievements in a high-pressure environment.
He said: “Hadley’s done well. The pressure was definitely on when we opened Bardolino, but he’s got on with the job and helped it become a popular destination for those looking for a relaxed dining experience.”
