Top North Somerset chef Jonny Burnett shares his banana, peanut butter and chocolate fudge brownie recipe with readers this week.

Ingredients:

Five Free Range Eggs.

Three Bananas (roughly mashed with a wooden spoon).

One tsp Baking Powder (sieved)

One tsp Salt.

300g Dark Chocolate (70 per cent or above).

230g Unsalted Butter (cut into chunks).

200g Crunchy Peanut Butter

180g Plain Flour (sieved).

190g Dark Brown Sugar

215g Caster Sugar.

This is an indulgent recipe with the most incredible banana and chocolate fudge gooey centre.

It really is one of the best brownie recipes out there and I have a little tip, the older and softer the banana, the better. It crushes much easier, and it saves you wasting and throwing out any old bananas

Method:

· Preheat your fan oven to 180 degrees Celsius, and line a 12x9 baking tray with baking paper.

· Add your butter and chocolate into a metal bowl, and place over a pan of water on medium heat, this is called a Ban Marie. Make sure the metal bowl never touches the water, as this could make the chocolate go bitter.

· Give the chocolate an occasional mix, it will take around 10-15 minutes.

· Once melted, take the bowl off the heat. And whisk in the sugars, whisk it in well, to make sure everything emulsifies.

· Add the eggs and whisk until they have all incorporated.

· Add in the bananas, and half of the peanut butter, and mix in well.

· Add the flour, baking powder, and salt, and beat it in until it has all combined with the mixture.

· Pour the brownie mixture into the lined baking tray.

· Put the rest of the peanut butter into a microwaveable bowl or tub and heat in the microwave for one minute.

· Now the peanut butter has heated up and softened, spread it on top of the brownie mixture. If you are artistic, you can make patterns which will look fabulous once cooked.

· Put the peanut butter covered brownie mixture into the preheated fan oven for 25 to 30 minutes.

· Fifteen minutes into the cooking, turn the brownie tray around, to ensure even cooking.

· After the time is up, take the brownie out. To get the chocolate fudge texture, pop the brownie tray in the fridge for at least five hours to set.

· Once set, portion the brownie, and enjoy that rich, indulgent, slice of chocolate heaven.
